I have not posted in awhile, you know with an eight month old son and learning that time management is a thing of the past, but I wanted to share my rib smoking experience with my pro-Q stacker. For the 4th of July, I smoked 4 racks of baby backs with the 3-2-1 method (more like 3.5-2-1) by hanging them from the top rack on my pro-Q stacker. Purchased the baby backs at SAMS CLUB and they fit perfectly by removing the two racks in the WSM. While I was smoking the ribs, I also smoked 8 lbs of chicken wings as well. Needless to say, the ribs were the best I've made and it was pretty nice to not have to remove the membrane on the ribs.
Thus, if anyone is contemplating buying the pro-Q stacker for the 18.5 WSM I have nothing but great things to say about it. Also, for some cheap rib hooks try the Grundtal S-hooks (5 pack) from IKEA for $2.99. They are stainless steel and worked perfectly! The next smoke, I will post some pics~
