Bought some of those big pork belly slices at Costco other day. Had a hankerin for some good smoked/crispy belly. Put 2 of them on big Z smoked at 225 until internal was 150ish, Cranked it up to 325 until pork hit 200. Wrapped, back on and it hit target (205-208), now they're resting. I only can eat a 1/2 of one. So, I'm gonna have extra meals
