This was filed in my Canada binder, hope it is Canadian. lol

Poulet A L'ail
(Garlic Chicken)

Salt and pepper
1 4 lb. roasting chicken, trussed
2 branches fresh rosemary or 2 tsp. dried
1 tsp. thyme
2 bay leaves
1/8 cup olive oil
1 cup white wine
50 (yes, 50) cloves garlic, unpeeled
Toasted slices of French bread

1. Salt and pepper the trussed chicken.
2. Stuff with rosemary, thyme and bay leaves.
3. In a casserole, brown the chicken well in hot olive oil. Remove the chicken from the casserole. Pour in wine and stir well, then add garlic.
4. Place chicken on top of garlic. Cover and seal the casserole well and place in oven.
5. Cook for about 1 hour in a 375 F oven.
6. Serve with toasted French bread. Serves 6
