Greetings fellow WSM-ers!
I have a 12lb Turkey that is currently frozen. It is going on the WSM Weds 11/25 at 6-7am. I am taking the turkey to my moms around 11am. I am having trouble deciding when to put in fridge to thaw, when to brine, and when to "air out". Any help appreciated, you guys are great.
