Plancha or CI grilled MX chicken

Needed a quick cook last night as time is running away from me these days. Beyond busy is an understatement.

This is so flavorful and easy, you can quickly whip this one up.

1 dried guajillo chile
1 dried ancho Chile
10 Chile de arbol (less if you want less heat)
6-8 large garlic cloves
1 Tbs oregano

Add all ingredients to a pot and just cover with water.

Bring all to a boil and then to a simmer for 5 minutes total

Let contents rest in its water for 5 more minutes, after the first 5 minutes

Remove all solids into blender and scoop out the oregano (slotted spoon will get it all out)

Add some of the soaking liquid to blender so contents all blend to smooth consistency

Blend like the police are chasing you

Pour blended sauce over chicken (this was 4 boneless skinless thighs and two breasts, cut into cubes already)

Salt your meat to your liking. I added around 1 Tbs here.

Mix onto all chicken pieces for even coverage

Place in a lightly oiled CI or plancha

Don’t touch the meat until a nice sear forms. It’ll take a few minutes.

Gently turn/toss the meat to cook fully through.

Dash of cumin into the meat and toss gently

When cooked, remove from CI into serving bowl.

Make tacos or burritos. Serve with fresh limes, salsas, crema and cervezas!
