Here is a different take on a "Juicy Lucy"

Pinto's Pimento Burgers

2 lbs. ground beef
4 (1/4" thick) slices of onion
salt, to taste
freshly ground black pepper, to taste
1 cup shredded extra-sharp Cheddar cheese
1/4 cup mayonnaise
2 oz. cream cheese
3 oz. bottled pimentos, drained and chopped
1 tsp. cayenne pepper
12 strips bacon, cooked

1. Preheat grill to medium high
2. Divide the beef into 8 equal parts and form each into a thin patty. Place a slice of onion on 4 of the patties, then place the other patties on top and seal around the edges with a fork. Season with salt and pepper.
3. In a blender or food processor, combine the cheddar, mayo, cream cheese, pimentos and cayenne pepper and blend or pulse until everything is well combined. Transfer to a bowl and refrigerate until needed.
4. Grill the burgers for about 4 to 5 minutes per side. When they are just about done, top each patty with 1/4 cup of the cheese mixture, then close the lid and cook for about 2 more minutes, or until the cheese is melted.
5. Remove from grill, place on buns and top with bacon, lettuce, tomato and whatever condiment you like.
