Peach Habanero Salsa, Part 2

It wandered off into discussion of hot sauces and cooking with hot chilis, but it was good.

Out of that came this recipe which I adapted (slightly) from the link referenced in the first post of Part 1.

This has a great flavor which so far has gone really well as salsa on its own and as a sauce for smoked ribs and and over bacon, eggs and cheddar in a stuffed bolillo. With 2 habaneros its hot, but not insufferable. Fix to your taste.

Habanero Peach Salsa

2-3 Habaneros, chopped with seeds
1 jar (14 - 15 oz. peach preserves OR 1 1/2 cup chopped peaches (3-4 peaches)
2 large yellow tomatoes chopped (or 4 small)
1/2 cup finely chopped onion
3 - 4 cloves garlic, minced
2 tbsp fresh lime juice (or what you have)
1/4 cup white vinegar
3/4 cup fresh orange juice (or what you have)
1/4 tsp salt
4 tbsp light brown sugar

Blend everything together in a blender.
(Optionally, bring to a boil over medium heat and simmer 3 - 5 minutes.)

This should make about 2 - 3 pints.

I think if you use fresh peaches, it might be better to use the optional heating step to bring it all together. Heating would also thicken it. The preserves have already been heated.

Edit: After the fact, it occurs to me that if you're going to blenderize this, then coarse chopping of all ingredients would be fine.
