sup folks..

going on vaca and promised the crew i would do a 10lb plus brisket, but i cannot bring my WSM.. gonna be using a 22 inch ketlle knockoff. got my firebricks and will foil under the other side, done this before, but not starting late at night and hitting the hay, any suggestions from the gurus?? using WGC briquettes..

Well you could stay awake and monitor the temps. You could use a remote temp sensor with alarm, ie. Maverick 73 or 732 so that you could sleep between coal loading OR, you can do what I do and cook HH in 4-5 hrs. Sleep like a baby all night and start early in the am. All will work.

Let us know how she turns out.

thanks Mk, i have a mav, and i think it will roll fine without messing with it so i can get a little sleep, the staying awake and monitoring temps would lead too fine Bourbon drinking which might not be a bad idea.. maybe woodford reserve..LOL thanks much for the replie.. glenn in SC
 
I used to do low and slow all the time in my kettle with a Maverick. Works fine. I still do it all the time but with a bbq guru (like my sleep).

If I were in your shoes, I would probably do what mk evenson suggested with the high heat...if for no other reason than because you will be using a kettle knockoff. There is no telling how that thing will perform. It will probably be fine, but if a cheap grill is going to frustrating me, I'd rather it frustrate me when I'm not supposed to be sleeping.
