No-Cook Mojito
4 cups orange juice
juice of 4 limes
2 cups olive oil
12 cloves garlic, crushed
8 TB. finely chopped onion
4 TB. dry sherry
4 tsp. salt
4 tsp. dried oregano
2 tsp. ground cumin
1/4 cup minced fresh ginger root
Stir together orange and lime juice. Blend in oil and then add rest of ingredients. Place in a bottle or jar with lid and refrigerate at least 1 day before using. Keeps about 2 weeks in refrigerator.
