No-Cook Mojito

"The traditional Cuban table is never without this versatile seasoning sauce. It is to Cubans what ketchup is to Americans, except far more macho and
potent. Use as marinade for chicken and pork dishes. It also complements meats, and seafoods as they're being broiled or grilled."

No-Cook Mojito

4 cups orange juice
juice of 4 limes
2 cups olive oil
12 cloves garlic, crushed
8 TB. finely chopped onion
4 TB. dry sherry
4 tsp. salt
4 tsp. dried oregano
2 tsp. ground cumin
1/4 cup minced fresh ginger root

Stir together orange and lime juice. Blend in oil and then add rest of ingredients. Place in a bottle or jar with lid and refrigerate at least 1 day before using. Keeps about 2 weeks in refrigerator.
