Night Cook

It has been raining for most of a week here in PA and I have not been able to cook outside very much. That along with the fact that I have an extremely busy day tomorrow lead me to, when we had a period without rain, to cook most of tomorrow night's dinner tonight. I will be putting together quesadillas tomorrow with what I cooked tonight. I made a pot of Mexican rice on the store. Then grilled chicken thighs and onions and peppers in the CI skillet.
We are sitting here as a family watching the last kingdom before we put the kids to bed and we are all smelling the food looking forward to tomorrow already!

Here is me last night at midnight cutting the chicken up, yeah I ate some while cutting.

Me preparing mine, while the kids are on the griddle. Yes that grilled is older then my kids.

Thanks Cliff, you are so right it was a really fun cook, something about not being rushed with knowing you are getting ahead of the game creates an energy about the cook. Results were so great today too!
