Hiya
I have just bought myself a Weber Smokey Mountain and being new to smoking. A big adventure ahead of me which I am looking forward too, cooking and tasting with a few beers of course. It doesn’t seem to be a big thing in the U.K. i am hoping for tips, recipes and advice. Thank you in advance

I have been using my wsm for about a year now. I'm still learning things and trying new things. I love cooking with it and I'm always convincing my wife that we should smoke it!
This book has great recipes all broken up by food group. I have made about half a dozen recipes from it so far and have not been disappointed. The bacon wrapped sausage fatty has been one of my favorites so far. There are rub recipes and sauce recipes that take a pork butt to the next level. I have bought several rubs and sauces and I like these homemade ones so much better. They add a bit of prep time but it is well worth it. In addition to recipes there is a good 50 pages at the beginning filled with info about smoking, everything from types of smokers, how to choose the right one, different woods to use for what meats, and much more. Also subscribe to all things barbecue on youtube. Chef Tom has tons of good tips, tricks, and recipes.

The best advice I can give you is be patient. If your first attempt does not go well just try again. When i first started my temps were all over the place and I couldn't get it dialed in. After a year of using it I am able to keep temps where they should be. I hope you enjoy your new smoker as much as I do!
