New to griddling

I just got a new Blackstone and I’m really new to this.
I did 2 cooks so far and at least they tasted good is the best I can say.
It sure wasn’t my style or presentation.

I used the air fryer for spring roll appetizers.
I gave them a spritz of canola and probably should’ve pulled them out a bit sooner.
After I scraped them off a tad they looked and tasted good so I will consider that a win :).

Also make some hash brown omelets (thanks to True North Cafe for the idea).
I think about everything went a little wonky with that cook.
The temps were all a bit hot.
I should have been more patient and waited for the proper browning.
The portions when served looked like a special needs retired pipefitter had his hands full.
The hash browned potatoes omelettes somehow tasted fantastic even though they looked funny-ish.
So I need to learn how to properly use the temps and get a b8t more comfortable with it.

I really like all the real estate that is on this griddle.
I have a Hunsaker disc for my performer and while it can smash a burger pretty good it just lacks at most other things.

Overall I’d say I am very impressed with this thing.
I think as time goes by I will get better with it so I’m kinda looking forward to that.

There are a bunch of things I want to learn how to cook on this.
I am in the searching for cool recipes mode.

Breakfast. That’s essentially the only thing I use my Blackstone for…I’ve tried steaks and they were not enjoyable at all.

But it makes some KILLER scrambled eggs, French toast, pancakes, bacon, breakfast burritos, sausages. I did try stir fry and it wasn’t bad, need to tweak it some.
 
Looks like the boss daddy of griddles. If you don't have an Infrared thermometer I would get one. The best way to judge temps on a griddle.
 
Smash burgers, Fajitas, stir fry, Breakfast, quesadillas, beef and broccoli, patty melt, cheesesteaks, Taco Bell Mexican Pizza, Pastrami on rye, fried corn, lots of other things. Youtube is your friend.

I just made us some grilled sammich’s and they were real easy.
I do have an infrared Thermometer and use it often.
I just figured out last night it works well for deep frying.
