Need an Idea!

Next weekend I will be attending a car show with my car club, and on Friday night of that show we haul out the big club grill (it's a big commercial gas grill that we use on Saturday to cook lunch for about 250) so that everyone can cook their own dinner. Over the past few years this has escalated from simple bring your own burgers and dogs to much fancier dishes, and I need an idea.

Here's what I've made in the past:
- venison burgers
- mojo chicken breasts
- pork chops with a liquid smoke/sesame oil/srirachi marinade, with a side of green beans wrapped in bacon

I'm looking for something a little different for this year. I'd like to avoid pork since we're now roasting a pig for Saturday dinner, but otherwise anything is fair game. Any suggestions?
 
Roadside chicken is great. You could probably do Roadside turkey legs too.

I always like a good pork loin cooked to internal temp in the mid 150's. high heat makes a great crust all around the outside. We slice up the loin and wrap it in grilled flat bread with all kinds of crazy fixins(Greek, Mexican, veggies, anything that sounds good)

oops, sorry... I reallized no pork. Well, you could do a boneless leg of lamb instead of pork.

Another vote for roadside chicken...........it's easy and people will go "wow!!, this is the best dang chicken I ever had!!!!".

I recently did roadside thighs on a camping/fishing trip using a Weber OTG. I did two complete batches (grill completely packed with marinated thighs). It was a huge it and it's fun to tend the grill.
 
You might consider kabobs. Shrimp or beef tenderloin with accompanying veggies (on their own kabob). They can be prepped in advance and grilled when ready.

I like the roadside chicken idea, thanks! I've been meaning to try it for a while anyway.

For a veggie, I'm leaning towards the grilled carrot Weber recipe of the week from a few weeks ago. It would be easy enough to make up ahead of time and keep in a gallon bag.

Any ideas for a starch? I did macaroni and cheese (my own smoked cheddar) in a Weber drip pan last year. That's going to be tough to beat, but I'm up for anything. I was thinking twice-stuffed potatoes, but I'm not sure if they'll heat before incinerating since indirect cooking isn't an option on the monster grill. Cold spots are about as close as you can get.

The Roadside Chicken was great. I may have over-marinated it slightly since I poured it over frozen chicken breasts about 24 hours in advance, but it came out well. I can't wait to try it on breasts with skin and bones, and on a grill where I can regulate the temperature. Adding the marinade was like pouring gasoline on. I may also try a little crushed red pepper or cayenne to give it a little extra zip.

The sides were twice baked (really once baked and once grilled) potatoes, and the Weber grilled carrots.
