(Mom's) German Rhine Potato Salad

Here is a very authentic German potatoe salad recipe you may want to try:

(Mom's) German Rhine Potato Salad (Schwai’s)
This is a nice light, refreshing Potato Salad which tastes even better the next day!

Ingredients:
6 Potatoes (12 small red or 6 Yukon Gold)
¾ Cup hot water
¼ Cup diced onions - preferably sweet Vidalia or similar
¼ Cup chopped chives
¼ Cup Salad oil - preferably extra virgin olive oil
¼ Cup Apple Cider vinegar
1 Beef bullion cube
1 TBS Corn Starch
Salt and Pepper to taste
**** Bacon

Directions:
Boil potatoes for about 20 minutes, peel and thinly slice about 1/6” slices.

Heat salad oil on medium heat, whisk in corn starch. Roast until light yellow - about 5 minutes. Stir in hot water with beef bullion cube dissolved in it, then add vinegar.

Pour mixture over thinly sliced potatoes. Add chopped onion and chives. Salt and pepper to taste (additional vinegar can be added to taste).

Store in refrigerator.

****Cooked crumbled bacon can be added.
