Miso bacon for Mother's Day

Finally got the Miso-cured bacon cured, smoked, sliced and fried, just in time for Mother's Day breakfast. Sorry for the lousy pic, but this was the best bacon I've ever made or eaten. So savory. Wow.
Oh yeah, if the shape of the bacon looks a bit funny -- I buy my pork belly from an Asian market and slice it cross-wise. Works for me...

Thanks to Jeff B for the recipe here. If you make your own, you've got to try it. I think Bob's cinnamon bacon is next on the list for me.
 
awesome! I fear recommending my own recipes because it's hard to know what others like in terms of salt levels and flavor components. I kind of felt I was on the right track here, but I didn't know if I was fooling myself thinking I was making it out to be more than what it was.


I'm glad I caught this thread. We were out of synch on FB and I couldn't see whether you replied to my question or not via my phone. And I forgot about it as it got buried in my feed. It's interesting how different FB is from TVWBB. FB is so temporal. Posts live and die in less than a day.
