I hope everyone had a great memorial day weekend. Here are a few pics from our Memorial Day weekend "Team Cook" with my brother and our good buddy Mike.

Here's Mike's WSM - about 10 years old now and well seasoned - we've made a lot of great Q' on this smoker! The old Party Q' works great in warm weather.

Rib Platter!

No preparation pics, but the next cook was a 12 lb whole brisket. It was a nice little brisket, with no real trimming required. We seasoned it dalmation style and smoked it over night at 225F. It was still 165 the next morning so we wrapped and put in a 300F oven until it hit about 203 and felt nice and soft. It went into a cooler from about 3 hours and we sliced for an early dinner - it was a darn fine brisket!

John K, everything looks delicious. What is in that one dish next to the ribs?
One of the ladies made an orzo pasta salad with roasted pine nuts, mozzarella, garlic, tomatoes, olive oil and basil - it was pretty dang good.
