Meatloaf Burrito Compliments of Mother Nature

The plan for today was to grill a tri-tip roast. But mother nature (gotta love her
icon_biggrin.gif
) decided that I needed a day away from the grill so she gave us rain, thunder, lightening, high winds and a
tornado watch all day long. Needless to say, since I do not have a covered BBQ area, the roast sits in the refrigerator waiting for tomorrow. So we had some leftover meatloaf from Thursday's cook, so I mixed it with some Rosarita jalapeno refried beans, heated some flour tortillas, smothered them with Gordo's white cheese dip and voila, instant burrito.

With all the different cheeses, veggies and spices that I used in my meatloaf, this made for a very tasty and filling burrito. OLE!!!
