Made a Sauce on the wimb

I made a new sauce yesterday for a HH brisket. I tried to get away from my thick sweet, tangy and mildly hot sauce that I typically use on my ribs and butts. This is what I did:

1/2 stick of butter unsalted
1 can(8 oz) tomato sauce
1/2 cup of apple cider vinegar
4 tbsp mango jam
2 tbsp honey
1/2 to 1 cup brown sugar
2 tsp salt
2 tsp pepper
1 tbsp spicy mustard
1 tbsp your favorite rub

Melt the butter and then add all of the above and simmer.

It originally tasted way to much like vinegar then I started adding mango and brown sugar until it was balanced. I was was pleasantly surprised as to how it came out and went really well with the brisket my friends and family liked it.

I found it ran to much for my liking so I took a 1/2 tsp of starch and mixed it with an ounce or two of water to dissolve. I added the mix to the sauce, it thickened it up just enough where it could stand on its own and not run but not thick like a KC sauce.

Next time I make it I will use a small can of tomato paste instead and cut the vinegar to 1/2 cup. I will add everything except the sweets stuff(mango, honey & brown sugar) until its right.
