Made a nice Prime Strip

Once again in keeping with my dislike of truly excessive heat, yet still loving a nice Maillard (sear) reaction. (the little one was purposely made beyond well for wife) Grill (my Genesis 3000) was set to full heat and allowed to stabilize for about 15-20 minutes, then outer burners set to medium, center to low. Allowed to stabilize. Steaks were dried off (none of this brining stuff). Generous salt and pepper. Cooked to 120 (for mine). While cooking flipped twice. Rested 5 to 6 min and consumed. Perfect mid rare throughout, perfect crust. Yeah some grill marks as well but not magic marker lines. And ate like buttah.

Looks good. Keep in mind that steaks with the "magic marker" sear strip things do win steak cookoff championships also. Though I personally prefer a full sear surface also.
