I am going to smoke a 10 pound bone in turkey breast and would appreciate some input on my strategy. I'm going to dry brine with a salt/baking powder mix the day before then inject with a mix of butter chicken brith mix day of. I'm planning on cooking at 325-350 to an IT of 160 and as a guidline am figuring around 3 hours cook time. I'd greatly appreciate any input and advice. Thanks guys.
