Last Night's Spares


 
Found two racks at a local store and did them up yesterday

Smoked them for 5+ hours at 250 measured at the vent. Bottom rack cooked a bit faster than the top one.

These ribs were not quite as juicy as the last ones I did but they were still quite tasty, although a bit spicier than the last time. My wife made up a new batch for me and I may have put on too much rub. My bro-in-law brought some beef ribs and I smoked those on my ECB. Although I am not a big beef rib fan, these had plenty of meat and they were very good.
 
They were done on the 22. I could have had both racks on the top grate but it would have been crowded. It was fun seeing how the cooking differed between the top and bottom grates
