Hey just a quick tip for you folks that like kabobs. I like to make a dish called Matar Paneer. I usually serve it over a simple Indian style yellow rice and occasionally have some meat or fish added to the plate as well. Figured I would try some lamb this time.
Was doing my periodic wander through the local Trade Joes and decided to try the Burgundy Lamb tips (8.99lb). Little cryovac bags of 1.6 lb or so. Picked up two.
Anyway made up the Matar Paneer today and simply took the lamb tips out of the bag tossed in just a little oil and on the preheated cast iron grates of the Performer. Didn't even sear them. Indirect the whole time, threw on some chips and 5 minutes on each side in 600 deg heat.
Simply awesome, tender as could be, and great flavor. I like lamb anyway but these were particularly good. No pics because wife and son were chanfing to eat and were having nothing to do with waiting.
I usually like to do my own marinades and all that but there's a good bit of effort in making the main dish (from scratch, paneer, ghee, skin and chop tomatoes, etc) that this "cheat" was a gamble that turned out great!
I didn't skewer, just through them on the grates as is. Delicious by all accounts. Give them a try, you won't regret it. I have another pack that I'll play with in the next few days.
