Kettle cooking options?

I'm going to try a simialr set up except with an 18 kettle. Just need to find me a pan about 14-16 inches

I'm gonna try the same thing expect I'm gonna put the coals around the outside to create a snake around the expanding metal ring. I will report back on how it works out for me.

A pizza pan should work for you.
