I saw this recipe ("Jumpin' Jim's" Chicken) and was set to do it for a bar snack/dinner for the basketball crowd at my Elks lodge. (#1477 Bergenfield, NJ... Stop in for a drink and say hi if you're ever in the NYC/NNJ area) It's also the home of my "No cost and low cost" kettles. A garbage rescued 22" OTS and an 18" Door prize "Estancia vineyards" OTS:
I started following the recipe on some legs, thighs and a few wings by marinating them all in Italian salad dressing. Then I added a touch of salt and a good grinding of black pepper.
Marinated, seasoned and on the grill indirect waiting for the lid:
Sadly, the natives grew restless and I never bothered to use the "BBQ sauce hottub" braising method before the finish. (I just brushed them up with some SBR honey BBQ sauce and let it cook on for a few more minutes). Next time I want to give the Jumpin' Jim method a shot though.
The chicken was superb! Very juicy and a big hit with the bracket watchers.
As for plated pics... there aren't any. I just put 'em on a foil lined tray and they were all gone in a few minutes. (At least I grabbed myself a trifecta of a leg, a wing, and a thigh!)
