Good Morning!
I believe I have the greatest job in the world. After a decade of teaching and coaching football in Texas, I hung up the whistle and started our school's BBQ Club and coach our two high school BBQ teams. If you get a chance check out 205 Pitmasters on FB. This is our second year competing and this both teams qualified for the State Championships! Team Smoke and Team Fire had great showings with Smoke finishing 14th in brisket and 19th in beans. Team Fire had an even better day finishing 4th overall out of 85 teams. Fire took 27th in chicken, 21st in beans, 6th in ribs and if you look at my profile picture you will see the #1 brisket cook in the state of Texas! The reason I joined this forum is because my program is growing; four kids the 1st year, ten this year and next year I am looking at fielding three teams. Our trailer has two smokers on it and if we field a third team we are going to have to go to drums or WSMs. I have watched market place like a hawk and snagged a 22 WSM and 18 WSM for about $300 and have been trying to learn them to be prepared for next year. I cater and compete through Texas Moonswiners and I'm thinking I might start buying up more and cook solely on the WSMs. I entered a comp this past weekend and my Webers kicked butt! Anyways, I look forward to learning and trying out the tips and tricks I find here!
