How much coal in SJ?

How much coal do you put in a smokey joe for grilling a couple steaks or others?

Also do you find the fire is really hot in the middle over the holes in your SJS but cooler around the edges?

Trying to dial in my SJS for picnic and camping season.
 
I use half a chimney.

Like every grill, the SJ tends to have hot spots. I probably move my stuff around a little more on the SJ than on the Performer to ensure even cooking.

I'll try to keep a cool zone even on the SJ so I can move the meat around if I need to.

yea, about a half chimney also. yes it gets hotter in the middle but really not much of an issue. heat is covering most of the grate. plus you can as i do, rotate the meat.

I use less than what Pat and george suggested. Maybe a third of a cheap chimney at most.

Try this:

Spread some new (cold) briquets so they just cover the charcoal grate, then dump those into your chimney. That level is all you need to cook some very good food!

Thanks Jim. I didn't think of going "backwards" with the coals.--fill the grill and then the chimney. Kind of like filling my margarita glass and then dumping it into the shaker...

for hot spots i just rotate the lid everytime i check the meat, seems that the hot spots are where the vent is imo
