I am a long-time Weber user from West Chester. Just upgraded from a regular kettle to a Performer. Feel like I've moved ahead a century without losing the fine flavor. Still trying to learn how to regulate the cooking temperature.

Also just purchased a Brookstone Grill Alert, which is a wireless remote thermometer. It seems to work OK for temperature, but was quickly fooled by the high temperature in the Weber Grill when I put the lid on. It told me my brisket was done about 10 minutes after I started cooking. I tried inserting the long temperature probe all the way into the meat to make sure none of the probe was exposed, but that didn't help. Then tried to run the probe wire through the top vent in the kettle, but that didn't help either. Hope this forum helps.

All of the online information either says nothing about cooking with the lid or shows cooking with no lid. What forum should I be looking for?
