Ive been a longtime lurker of the Virtual Weber Bullet website but never popped on the forum, but here I am! I have been using my 22" WSM for almost 5 years and I absolutley love it. Currently I have 4 grills/smokers and soon to be 5. I also have a 22" Weber Kettle, a Momument Gas Grill and just recently a Pitboss 5 Series Pellet Vertical Smoker. I started smoking with the WSM because I wanted to learn the hard way of stoking fires, temperature control, playing with different kinds of charcoal and wood. I have absolutley no regrets taking that route and I like my new pellet but it does not yield the same results. That being said I am he to share some knowledge of being a butcher, please pick my mind I have been doing it for 15 years as well as learn and fine tum my techniques and knowledge. Is pork butt and pork shoulder the same cut of meat?
Yes and no, most people that refer to a pork shoulder or a pork butt refer to the upper blade portion of the shoulder also known as a boston butt. A true butt is the lower portion above the foreshank known as a picnic. But more than likely when you grab a pork butt from the store its the upper blade cut.
