Been using my 22" WSM for over 2 years. I have worn out several offset smokers over the years. Worn out really means used them till they rusted out. I made some amazing BBQ on them but they do not compare to the WSM. I use the WSM for grilling as much as smoking. The versatility of the WSM is amazing.

Adding a ThermoWorks Billows as soon as it arrives and looking forward to long unattended cooks. I found that maintaining my 225 degrees was cumbersome and decided to go with the fan so I can get some sleep during the overnight cooks. I refuse to sleep and let my BBQ suffer.

Anyone with any pointers or opinions on the TW Billows, please advise.

As a Yankee I visited Cary many times over the last 25 years for work. I liked the area and the people very much.

The locals said Cary stood for Containment Area for Relocated Yankees.
 
Hey neighbor, welcome! I have used a ThermoWorks Billows on my 18" WSM, and I would recommend that you get the Billows damper that goes with it. Without the damper, it is difficult to cook low and slow, since air will be drawn in even when the fan isn't running. More often, I use a Pitmaster IQ, as that temperature controller comes with a built-in inlet damper, making temperature control a bit easier, but of course YMMV.
