So over Thanksgiving I finally managed to try my HeaterMeter, RotoDamper, and Air burner. I have an offset smoker, so I constructed an air burner with a baffle on the firebox.
I gotta say I was pretty pleased with the design of the air burner and the baffle, and it seems to work very well, sealing off air. I used a CPAP hose between the RotoDamper and the Air Burner which allowed my Rotor damper to be located anywhere.
Its not very pretty yet, and my RJ45 receptacle will not fit into the opening on the RotoDamper for some reason, not ever close. Which is odd, because its a standard Keystone plug. I also had so use a couple reducers to get the fitting down to the size of the hose. (Ralph can I custom order that manifold with for a 3/4 black pipe?)
The Turkey turned out fantastic, (I cider brined overnight prior to smoking with lump, hickory and applewood). I had my pit probe about an inch off the food grate, but I noticed that the mechanical thermometers on top of the smoker read a good bit higher than my probe, and there was evidence that the top of the turkey got more heat than the bottom. So I have since taken further steps do decrease heat leakage in the smoker box, and I am also going to extend the chimney to the bottom of the smoker box internally. I may also drop the pt probe in from the top next time. I'm going to have some fun with it over Christmas break, but I wanted to share and gather input. Merry Christmas all!
