Habenero-Honey-Mustard Sauce

1-2 habeneros
1 T white vinegar or lime juice
pinch kosher salt


1/2 cup sour cream
1 T mustard
1 T Honey

1/2 t habenero puree (when finished)

Lightly toast 1-2 habeneros on a skillet, when toasted blend with 1 tbsp lime juice or white vinegar, add a pinch of salt and reserve. Make sure you keep a lid on the skillet or you might inhale some habenero oil....its no fun.

in a small bowl combine remaining ingredients, adding 1/2 t of the habenero puree.


Nice on sandwiches or to kick up any smoked meat. Pairs particularly well with basic mayonaise based tuna sandwiches.
 
Jarrod, are these dried habaneros or fresh? Is the mustard regular ball park mustard or Dijon or some other type? Looks like an interesting recipe.
 
Fresh Habeneros, plain mustard works but i doubt dijon, honey, or other variations would negatively effect, or overwhelm the intended flavors.
