Grilled Rum and Butter Chicken

Grilled Rum and Butter Chicken

2/3 cup plus 2 TB. dark rum
1/3 cup orange juice
1/3 cup plus 1/4 cup melted butter
2 TB. honey
1 TB. minced garlic
1 tsp. dried thyme
6 boneless, skinless chicken breast halves

1. In a small bowl, combine 2/3 cup rum, orange juice, 1/3 cup melted butter and the honey, garlic and thyme. Put the chicken in bowl or plastic bag with 2/3 cup of the marinade and marinate 4 hrs. or overnight. Cover and chill remaining marinade.
2. Preheat grill to medium high.
3. Remove chicken from marinade and place on grill for about 8 minutes,, basting with the marinade, turn and grill 10 or 12 minutes more. ( 165F) Discard marinade.
4. Remove the chicken and place on serving platter. Add remaining rum and butter to reserved marinade, drizzle some over chicken and pour rest in gravy bowl.
