Grilled Lemon-Sage Chicken
4 lbs. boneless chicken breast halves, rinsed, patted dry
3/4 cup fresh lemon juice
6 TB. olive oil
1/4 cup vodka (optional)
1/4 cup chopped fresh SAGE or 1 TB. dried, crumbled
2 tsp. honey
Dash of hot pepper sauce (such as Tabasco)
1. Place 1 chicken breast between sheets of waxed paper. Pound to thickness of 1/2" using meat mallet or rolling pin. Repeat with remaining chicken. Mix remaining ingredients in large shallow glass dish. Add chicken and turn to coat. Let stand for at least 15 minutes or up to 1 hour.
2. Prepare grill to medium heat. Remove chicken from marinade; reserve marinade. Cook chicken until just springy to touch, brushing frequently with marinade, about 4 minutes per side. Makes about 8 servings.
Re. Sage: According to several sources, sage is very good for us, health wise. Some of the things it is good for are: may help preserve memory, sooth sore throat, works as a anti-inflammatory, anti-bacterial, anti-oxidant and anti-perspirant. And many other things.
(yes, I'm working on my Herb & Spice binders.) lol (just the saffron thru thyme one) If anyone wants recipes using any of those, I will be happy to post.
