Did you slice the eggplant crosswise or lengthwise?
I have been thinking about making lasagna with eggplant and most of the recipes I found instructed cuttings crosswise, but I am thinking lengthwise would work better. Lengthwise is how we slice zucchini to make zucchini lasagna, usually in the summer when one of the zucchini’s grows too large.

I sliced crosswise, on a bias. If using this method, stripe the eggplant.
If slicing lengthwise , no need to stripe the eggplant.
1/2 inch slices was perfect. Super easy meal to assemble.
