Grilled chicken and smoked cabbage

Here's a cook I did recently - Saffron marinated chicken and a smoked cabbage. Both recipes came from Raichlen's How to Grill book.

Used chicken thighs and balkan style plain yogurt, and followed the recipe for once.

The cabbage turned out well. Recipe calls for 60 - 90 mins cook time. For me 90 is required. Next time I will have it foiled for 45 mins and uncovered for 45. I only had it foiled 30 mins this time. Only need to add smoke wood when it's uncovered.

The chicken turned out nice and moist, and the cabbage was a hit as well.
 
Mark, that cabbage looks pretty good. Does it end up soft or crunchy? Oh! sorry. The chicken looks good too, but that cabbage really got my attention.
 
Mike - the outer leaves were a bit crispy as you can see. You can vary the amount of softness by how long it is foiled. I foiled for 30 mins, next time it will be 45. Obviously the foiling gives a moist cooking environment.

The cabbage turned out quite firm, but was delicious. I'll make this one again, this preparation makes for an interesting side dish.
 
OMG, that is some fine looking chicken. Perfectly cooked!! Bet it was great. I'm going to have to give this a try. Thanks for posting!
 
Thanks guys.

I would have liked a bit more saffron flavour from the marinade. The box of threads I had was a bit old. I also think some garlic in the marinade would be a nice addition.

I just remembered that I skipped the baste portion of this recipe, due to a lack of butter in the fridge. Didn't want to use margarine.

That may have been the little extra I was looking for.

Not that it wasn't enjoyable - we all liked it. It turned out nice and tender. I'll do this one again sometime.
