Are griddles in restaurants cast iron ? I have seen what looks a wide scraper used slowly to scrape them to clean. I have 9x16 Lodge double sided griddle I have used on my Genesis 1000 Nat gas grill. Would it work better if I wet sanded it smoother to cook on than seasoned it ? Tks. BW

Wet sanding will take forever. I used a grinder and flap disk for my 12" fry pan. I like the results but I think a good seasoning will be just fine. The griddles in restaurants and for home are mostly carbon steal not cast iron. Carbon steal is smoother but have most of the same properties and season the same way.
