I'm a longtime Weber gas grill (Silver Genesis-B) user. Today, I just received and assembled my new 22.5" WSM.
I'm looking forward to cooking low & slow during fall weekends. I'm undecided still on the first meats to smoke. I think I will smoke both a Boston Butt and brisket.
The WSM came with a cover. When not in use, I plan to keep the WSM right next to my grill outside. I have a grill cover but don't use it because it seems to collect more moisture/condensation and takes longer to dry out. Any opinions on using covers?
For members in the NVa area, where do you go to get primal cuts of meat?
