Grate level temperature options?

Hello everyone!
Bought an 18" WSM and looking to see what the options are for monitoring temps at the grate level. I purchased a 5 dollar taylor oven thermometer to try to see the temp diff between lid therm and grate level but the oven thermometer took about 45 minutes to reach 350 in my oven and I think that is not practical when doing the minion method (I could be wrong if someone more knowledgeable knows?)

I have seen the eyelets for sale on the BBQ Guru site and I'm considering doing that however what does everyone suggest for a thermometer to stick into the eyelet?
I wouldn't mind a digital probe one but I'm worried the wire/probe shouldn't be in the smoker for long periods of time without being in food, but again I could be wrong since I'm new to all this haha.

Any advice anyone could give to get accurate temperatures at the grate level would be appreciated.
 
I have three Maverick ET-7 dual probe remotes that I use. I drilled a small hole in both of my WSM's to thread the probes and wires through. Some guys mount grommets to run the probes and wires through, I didn't, I just put them through the holes.

I drilled a hole in a block of wood to put the probe through and just set it on the grate.

You'll hopefully get a lot of other suggestions and you can try whatever idea you like best.
 
I'm reading that the eyelets from the BBQ guru site don't fit the maverick et-732 as the probe is too large.
Does anyone know of any other eyelets that will work with this or another quality thermometer to fit these eyelets?
I'm hesitant to drill my own holes and cracking the smoker but I guess I will if no other choice haha.

The BBQ Guru grommets are smaller. I did something others might not. The only part of the Maverick prob that is too small is the width of the crimp. It is only marginally too small. They are very well crimped. I put the crimp ends in my vice and narrowed the width only slightly and now the probes pass right through. It did not affect the crimp. They have been working well with no isues. I also use the Guru grommets for the analog therms. I have one therm I use from my Turkey Fryer and another NSF Analog I use on the dome of one of my WSMs. They also pass right through the Guru grommets. These grommets have a nice neat look to them. I also did the lamp rod mod on the other smoker I have. I used an existing grill strap hole and a round file. I simply opened the middle section up to 3/8" in dia. It's very easy to do. Then I drilled the grill strap out to 3/8" and the lamp rod passed right through. I also added handles toohttp://i1098.photobucket.com/albums/g371/Hydro312/IMG_0384.jpg[/img]
