Hello, thanks for letting me join your thread.

I've had a Weber natural gas E310 for two years and I've made some amazing creations with it using woodchips for smoking. I've been exploring ways to use a little coal on this unit without clogging the venturi tubes to no avail so I took the plunge and bought a 14.5" WSM. So far the results have been spectacular.

I've really enjoyed the WSM so far and look forward to continuing to learn about how to make some dishes that make my boys (and the neighbors) salivate.

I'd like to compete in a local BBQ festival in the future but I don't think this small unit will be enough, any feedback is appreciated.

I'm looking at finding some good vegetarian dishes that I can make for my wife. I've tried some small dishes including grilled veg, portabello mushroom and baked brie.

Anywho, cheers for now.

Hi Colin and welcome! I'm from Winnipeg born and raised so it's very cool to see a fellow Manitoban here.

Welcome to the forum Colin. Congrats on that WSM. When you find good vegetarian recipes for your grill or WSM, please post them. Our niece and her husband have gone vegan and we need to have dishes for them when the whole family is here for smoked meat. Sounds like you are doing it right.

Welcome Colin and congrats on the WSM. looking forward to seeing some cooks and we like pics lots of them.
