I know this is a bbq forum, I just wanted to share on of my favorite meals which is fried salmon.
I started out with a nice sockeye fillet, added some salt w/fresh ground pepper, spread on some basil pesto, a few drops of hot honey, some garden freshly chopped fennel and then several dashes of whisked flour to the meat side. I left the skin side alone and then cut the fillet into 4 sections.
After my pan w/butter reached proper heat I tossed in the 4 pieces for a few minutes until the skin was nice and crip, I then flipped it over to sear the meat side of the fillet.
It’s chanterelle mushroom season here and the roadside stands are full of decently price mushrooms so I sauté up what I had left (including some regular mushrooms in butter and good sake for a side dish.
My wife made some rice and asparagus.
My mom made a nice kale salad w/ some pairs from our trees and the left over beets that we enjoyed cold this round.
My older brother cut the bread and opened the wine.
