Here's a pic of two pork shoulders just about ready to come off the WSM that I cooked for our niece's wedding on Saturday. I was not aware that what the pork shoulders I cooked were the centerpiece of the buffet table, but was humbled when I found out. We provided the pork as our wedding gift to the couple. I think they appreciated it much more than something we would have bought from their gift list.

Used a modified Chris Lilly rub and tried them w/o the CYM slather, which I'm not sure I will continue to use since it came out great. Saved some time and cleanup too without the CYM, and the bark was plenty flavorful. Smoked them for just over 10 hrs., then pulled & foil wrapped the four shoulders for a couple of hours until it was time to pull and make sandwiches. I added a little modified No.5 sauce mixed with SBR and some dry rub to keep them together and give it a sweeter flavor. The family bought small dinner rolls (Sister Schuberts) instead of slider buns, so the sandwiches were about two-bite size. Never thought of PP as finger food before!

My brother in law asked for me to set aside some PP for the newlyweds, so I brought my vacuum sealer and quickly sealed and froze about a pound for them to take on their honeymoon.

Time to pull your butts off the WSM.

Fortunately, there were a couple dozen sandwiches and about a pound of pulled pork left over to take home. Wanna guess what I am having for lunch today?
