Found a Prime Strip

A bonus find while rummaging my big freezer yesterday. One of my 1.5" NY Strips prime. It went on Big Z yesterday eve. 220 and smoke until it hit 105. Then pulled and foiled until Big Z got cranked to 460 deg. Got it back on for a nice crust. Pulled, rested about 5 min and tucked in. Oh BOY was it ever good!
 
Yeah, through the years I have tried things that just have not worked. Cooking from frozen is one, the "long term salting" (or as I call it corning or pickling), only has yielded weird color steak, with strange rubbery texture. I keep going back to same tried and true. Thick steak, S&P only just before putting on at moderate heat, then finishing at a higher heat but not blast furnace hot. Typically about 450
