Yesterday had a hankerin' for beef back ribs. Since I bought a full slab to do with the roast on Christmas Day I decided to fire up my Member's Mark. It was just prior to this bitter cold blowing in on the back of hurricane winds. Had it set at 225. All going well and then the bitter cold wind came. It could not maintain it. Had to move into the garage and even there, wind was so brutal it was totally struggling. Once I maneuvered it temps came back up. (the bad part) but, the (good part) once everything was going well those ribs came out tender, juicy, great smoke. Totally deeelish.
But, the weather was so brutal even this grill with full double wall insulated build could not hold temps against it. I sure hope I don't have to put up with this early AM on Christmas Day when I try to either fire up Big Z or Member's Mark for the prime rib and those back ribs.
