First time using Kettle for Ribs

Usually I use the WSM for baby backs but with only one rack tonight, I switched it up. I threw these on at lunch and did 3, 2, .5. They came out great. Definitely will be doing this again during the week!

I used Bad Byrons rub with Brown Sugar and temp was easy to control around 250 the entire cook. I used one charcoal basket with 5 pieces ashed over to start. I added a few unlit pieces here and there when checking and it seemed to work out great.

Great smoke ring, great color, great cook! I have never slow cooked on the kettle. Was it easier for a weekday then using the WSM?
 
100%. Super fast to get going since I filled the basket up and left a corner open. Started 5 pieces of Kingsford in my rapid chimney, ate lunch while those ashed over. Poured them into the open corner and dropped one chunk of Fruita hickory wood on the lit side and left alone for about 2 hours while it got up to 255 and basically stayed there. I had to keep the top vent only open about 1/4 inch. Bottom was all open. Super easy to maintain. I will definitely do this again during the week when its just my wife and I.
