I received a gift of some Flat Irons along with some other goodies from Omaha Steaks, never had anything from there before. One of boxes was 4 - 7oz Flat Irons. Defrosted three of them for dinner. They seemed a little skimpy, but nicely marbled. Salted them and let sit for about 45 mins.
Since the steaks were thin, started with asparagus and brussel sprouts. Didn't get a pic of the sprouts on.
Flat Iron's on the grill. Both sides rubbed with Penzeys Arizona Dreaming.
First turn after about 2 minutes.
Pulled the steaks at 130. Plated. I kind of got skimped on the sprouts and asparagus, oh well. Served with a Tuscan Bean salad and cheap, but decent Cabernet.
I was very pleasantly surprised. Crust and spice were awesome and good beef flavor, very juicy. I'm going to have start looking for Flat Irons around here.
