Hey guys. Smoked my first turkey last weekend. It came out pretty good and was super easy to do. I used cowboy lump charcoal. It burns hotter...REAL HOT. I had a chimney going and dumped the rest of the 8lb bag into my ring. The full ring got up to 450 degrees after about 10 minutes. At that time I assembled the smoker and got the temp down to the 300-305 range for the whole cook. My goal was 325 but I guess most of the energy was wasted when I first started and didn't get the smoker assembled fast enough. Because of that the skin came out crisp but had a little chew to it. The turkey was great though. So tender and moist. I also injected the breast with butter before cooking and seasoned it with a home made poultry rub under and on top of the skin. I did the smoke on a 45 degree day in Jersey and it was a little windy. Took about 2-2.5 hours to get done. WSM was stable throughout the cook.
