Cooking knuckles seems to be quite popular around those parts. One of my fav things I would eat when I would visit Munich and then into the alps region with my friends there. Was roasted pork knuckles. I think I could have lived on that dish. I've never seen those cuts and such here
 
yes, it's also common in austria to eat a so called "stelze" (pork stilt). there's a restaurant in our capital vienna, which is more or less famous for them (beside their beer ;-))

beef hammers aren't that popular in my region, but (as mentioned in a previous post) definitely worth a try or more 🙂

most of our butchers only offer this cut upon request.
