First Post- bone in chicken breasts on the SJ


 
Hello, Everyone. I've always used my 22" kettle, filling the chimney all the way with lump charcoal, and now I'm trying to adjust to the Smokey Joe. I'm ok with burgers and hotdogs but tonight we're having bone-in chicken breasts. There isn't much room on the SJ to leave a cool zone. I'm guessing...3/4 chimney full, spread the coals evenly, cover and cook until 165...is that what you'd do?
 
Greg, I agree with Kyle that 3/4 of a chimney is a lot unless you are using the small Weber chimney. Then it might be okay. I made my SJ into a WSM mini and never did chicken on it before that.
