Feeding the homeless *****


 
Our church often provides sloppy joes and corn bread for our shelter.

We'll provide a recipe and ask several members to make a batch or two, We then combine all the batches together at the shelter into 1 big pot for re-heating and serving. Works pretty good.

I was thinking pulled pork would work good too.

When I worked at the B&B, I did a lot of breakfast stuff, and really liked things I could prep the day or 2 before and bake off the day of. This included quiches, bread puddings, breakfast casseroles of all kinds, etc. Also enchiladas can be filled, wrapped and frozen, then sauced and baked from the frozen state. We'd also do a vodka pasta (i'd leave out the vodka for your crowd) in large chafers that was bowtie pasta and sauce, then top with sliced grilled chicen, parmesan, fresh-torn basil and sliced cherry tomatoes, and a little more sauce and heated. A large chafer (or large alumin foil pan) could feed about 20 people, along with the other sides.
