Fajita rub
1 tsp turbinado sugar
¾ tsp kosher salt
¾ tsp ancho chili powder
½ tsp smoked paprika
¼ tsp granulated garlic
¼ tsp granulated onion
¼ tsp black pepper
¼ tsp cayenne pepper
¼ tsp ground cumin
Decided on fajitas tonight but did not have time for a long marinade….after spending a lot of time reading this site over the last few years I decided to wing it on a rub. Had one ¾ lb strip of skirt steak (premium choice from the yuppie market) I first used the juice of ½ lemon, then put together this rub.
Let sit in the fridge for an hour or so…seared on the gasser with green pepper and scallion…
Honestly the best tasting fajitas I have ever had…no salsa needed nor wanted, I did not want to cover up the fantastic flavor….many thanks to all the “pro’s” here, I think I’m getting the hang of all of this.
